Homemade Ketchup by Elk in the Kitchen

For whatever reason, every food blog that I follow has been saying that popcorn is THE snack for the Oscars this year. Well, I say no to that. Mostly because I had a hunger much stronger than any popcorn could satisfy. So, I decided that the only option was chicken. Chicken breaded in Panko crumbs and then fried. And of course, it had to be accompanied by ketchup, because I'm not crazy. In an attempt to make myself feel less guilty, I made my own homemade ketchup. It was the first time I'd ever tried it, and let me tell you, it was worth it. Nobody really cared what my predictions were for the Oscars (mostly because I hadn't seen any of the movies), but everybody was waiting with bated breath to see what I put on their plates for dinner tonight.

This meal is decently easy to make. The only trouble is that the ketchup takes 2+ hours to make, so you either need to make sure you cleared enough time out of your day, or just make it in advance (which is totally doable). For me, I made it today, because it's Sunday, and what else did I have to do? Nothing, I had nothing else to do. I actually decided extremely last-minute to make the ketchup. and luckily I had all the ingredients I needed. I started off by sweating chopped red onion and garlic in sunflower seed oil and salt, and then adding a chopped red chili pepper to sautee a bit with them.


After a few minutes, I added tomato paste, vinegar, sugar, molasses, water, lemon juice, and a mixture of ground spices.



I combined all the ingredients with a stir or two, waited until it boiled, and then reduced heat to low and let it simmer for two hours. The ketchup cooks down so much in that time, it's ridiculous. It probably ended up being one quarter of what the pot started with.


After the simmering and the considerable reduction, I blended the mixture with my immersion blender, and it was finished! Like I said, super easy, even if it did take a few hours.

Homemade Ketchup

Ingredients
1/2 red onion, diced
3 garlic cloves, crushed
1 red chili pepper, seeds in, diced
1/4 cup sunflower seed oil
3 tsp salt
1 sprig thyme
1 pinch black peppercorns
1 pinch fennel seeds
1 pinch coriander seeds
14 oz tomato paste
1.5 cups water
1 cup apple cider vinegar
2 Tbsp molasses
1/2 cup sugar
Juice of 1 lemon

Directions
1. Sweat onion and garlic in sunflower oil in salt for 2-3 minutes. Add diced pepper, and cook for a minute or two longer.
2. Grind thyme, peppercorns, fennel, and coriander. Add the spice mix, tomato paste, water, vinegar, molasses, sugar, and lemon to the pot with the sweating vegetables, and stir once or twice to combine.
3. Bring mixture to a boil, then reduce to low and let simmer for two hours. The ketchup will reduce considerably, and thicken up very nicely.
4. After two hours of simmer, use an immersion blender to blend the ketchup into a smooth mixture. If you don't have an immersion blender, you and blend in a blender in small batches. If worse comes to worst and you don't have any type of blender, the ketchup will still be delicious without it.
5. Enjoy with a burger, fries, chicken nuggets, or anything else you would like!

Fall 2015: Collections We Love



Cue 1920s jazz. The modern flapper is here and beautiful. The Marchesa collection was dripping in influence of the 1920s flapper. Fringe was everywhere in this collection. Fringe is a prominent trend for the fall season. Marchesa took the fringe and brought it back to one of its big moments: the 1920s.  You can even see the influence of the 20s in the hair style each model was given. It was a short wavy bob. The collection was breath taking. Georgina Chapman and Keren Craig were thinking about an opium dream. There is a smoky feel with the colors, fringe and shaping used. The color pallet was mostly white, silver, and black with a few pops of color. The whole collection has a dreamy reminisces of the 1920s. Marchesa stayed true to the brand in creating detailed luxurious dresses.

Hey guys, I’m Elke, otherwise known as ElkNation or Elk in the Kitchen, a (soon to be) fellow Drexel student, studying Culinary Arts, and I’m here to talk to you about food! I know that up until now, Bogus has been mainly about fashion, but Missy and Marissa are making some changes to the blog, and because of that, I get to be here. If you’re at all nervous that a non-fashion person is speaking to you, I’m willing to disclose the information that I spent a full semester at the Fashion Institute of Technology, studying fashion marketing. It only took me about three weeks to decide I didn’t want to work in fashion, but those three weeks were pretty exciting.
So, back to food. You’ve probably realized that I am one of the guest writers that Missy mentioned in a previous post, and for my first recipe, I’m going to show you something simple and healthy! (Don’t worry; most of my recipes aren’t that healthy. When it comes to cooking, less health equals more fun.)

Crunchy, Better-Than-Potato-Chips Garbanzo Beans
Ingredients
1 can Garbanzo Beans (try to buy a can with smaller beans, as these crisp up more easily)
2 Tbsps. Extra Virgin Olive Oil
2 tsps. Kosher salt 
2 tsps. Cajun seasoning, or seasoning of your choice
Directions
1. Preheat oven to 400◦F
2. Open can of beans, drain, rinse, and gently pat dry with a paper towel
3. Line a baking sheet with parchment paper and spread the cleaned and dried garbanzo beans out on the tray. Drizzle the oil over the beans, and sprinkle the salt and the seasoning (I like to use Cajun seasoning, but if you don’t like the heat, you can use pepper and rosemary, or any seasoning of your choice). Mix the beans around with a spoon to evenly distribute the oil and seasonings.
4. Place tray in the oven, and let bake for 15-20 minutes, or until crunchy to your liking. I like to check on it every 5 minutes or so and mixing it around, to make sure every bean gets baked evenly.
5. Take out of oven, transfer to a bowl, let cool, and enjoy! Packed full of protein, this simple treat tastes just as good as any bag of potato chips, and you can feel good about eating it too!

Fall 2015: Collections We Love



Rodarte's fall collection was a breath of fresh air. After seeing show after show of the same prime trends I was so excited to see Rodarte's line followed almost none of them. Rodarte kept the hemlines of all their skirts short, which was different then the midi skirt trend we have been seeing. One of the main themes of Rodarte was the mixing of different textures between the fabrics. There was a lot of different pairings. There was lace, fur, leather, and sequence. Sequence was everywhere. One of the pairing I loved was lace paired with leather. I loved sequence flowing into fringe. I was pleasantly happy with the high waisted pants. High waisted pants will still be the preferred style of pants this fall. Rodarte did keep up with the 70s theme channeling a lot of inspiration from disco. You can see the inspiration in the leather pants and sequence. Rodarte was a perfect update on traditional fall fabrics: leather and fur. The makeup was a clean face with a light pink lip. Overall, Rodarte was an amazing original collection.

Fall 2015: Collections We Love





Kaelen has incorporated various important trends for fall fashion into their collection. The first trend you can see is the slits in mid length skirts. The blush color was a common color seen throughout the collection. This blush color has been an important color for a couple of seasons now. The next trend you see is fringe on a coat. Fringe was very popular in Pre-Fall and it has continued in to Fall. I love the contrast between the blush pink and the peach color. You can also see another mid length skirt, the new popular length for skirts. The next trend you can see is the traditional color block. Color blocking has been popular all year long and Kaelen continues it into Fall. The color block is with neutral colors. It's a transition from the spring color block with bright colors to the fall color block with neutrals. The final look is an eyelash leotard with matching cardigan. The gray eyelash sweater is a great contrast from the peach, blush, and floral patterned fabrics. The eyelash sweater has been a popular fabric for sweaters for a year or so. It will continue to be popular this fall as well. Another thing to note about Kaelen's collection is the make up. Kaelen went with a fresh face look and a pop of color on the lip. The lip color is red with an orange hue. Overall, Kaelen's collection is a mixture of basics as well as incorporating all the trends for the upcoming fall season.

Not Your Mother's Beach Babe Texturizing Spray




I've wanted to join this sea salt hair spray craze for a while now. I stopped by Target and picked this up, hoping for the best. I wasn't sure what to expect. There were so many reviews of people loving it, and others filled with dreadful stories about needing to condition their hair for days after using this product. Needless to say, I was nervous. One of my co-workers finally recommended this spray to me, so I went out and bought. My hair is naturally straight, flat, and boring. My hair couldn't hold a curl if my life depended on it. I wasn't expecting much. After a few experiences with this spray I'm happy with my purchase. I think it works best on damp hair rather than wet hair. You have to use quite a bit to get results. I like to wait to till my hair is damp and spray my hair all around multiple times. I then lightly brush my hair our and then braid it into two loose braids. I sleep with my hair in the braids. In the morning when I take out the braids my hair has a nice light wave to it. The spray adds additional texture to my hair. The spray also helps keep the oils in my hair at bay for the day. Overall, I would say a 4.5/5. If the spray doesn't work for you right away, keeping trying different ways of using it to style your hair till you find the one that works for you.

Welcome!!!







Hi Everyone,

I'm so excited to introduce the new Bogus Fashion to you! We are now moving Bogus permanently off of Tumblr on to Blogger. It has been a long time coming but we are just so happy to finally show you guys it! We are also turning Bogus Fashion into a lifestyle blog. Our fashion will still be the number one topic but we will be adding food, makeup, and music. Marissa and I will also be joined by new guest writers who will provide insight to more content. I can't wait to hear your feed back and suggestions. Let us know how we are doing in the comments!!!
